Hello! I have a 2019 Ford Escape with factory rails and a panoramic sun roof. The manual says that the roof will support 45 lbs. Can I buy aftermarket cross bars or a stronger rack that would support a 160 pound roof tent, as well as my weight when in use? Thanks!

I did some research on your 2019 Ford Escape and it is fairly easy to remove the factory roof rack system. You could then install an aftermarket roof rack such as the Rhino Rack Vortex Aero Aluminum Cross Bars 54" Long # RRVA137B-2, Legs # RRRLKVA, and Fit Kit # DK375.
This system has a weight capacity of 165lbs which would be enough for your 160lb roof tent. Roof racks are weight-rated for when the vehicle is in motion, so it will be able to hold your weight and the tent's weight when the vehicle is stopped. Just don't exceed 165lbs when the vehicle is traveling.
