Carrying two canoes on your Honda Odyssey's roof is possible but it will require wider crossbars than the standard setup for your Odyssey. Depending on the style of canoe you have they usually range between 33"-38" wide. Getting a wide set of crossbars is necessary to allow them to sit properly.
If you have raised rails that run front to back on each side of your Odyssey you can use Yakimas Round 78" CrossBars # Y00411, RoundBar SL Adapter # Y03536 and TimberLine Towers for Yakima Crossbars # Y33TR. These bars will be about as wide as your Odyssey to please be mindful getting in and out of your vehicle so avoid bumping your head. This does seem like a drastic number but the next size down is only 66" # Y00410. Even with slimmer canoes that would be a really tight fit.
To secure your canoes to your roof rack I would use the Malone BigFoot Pro Canoe Carrier with Tie-Downs # MPG112MD. The padded gunwale brackets keep your canoe from sliding back and forth and it also comes with bow and stern straps to keep the canoe secured.
