The Edge Insight CS2 # EP84030 that you referenced can be programmed to display the engine oil pressure or engine oil temperature on your Jeep Grand Cherokee by going through a few steps.
Looking at the gauge layout screen, press the ENTER button and you will see a gauge location highlighted. Then use the arrows to highlight the particular gauge location you need to modify. Highlight and select NEW PID option, then press enter.
From here use the up/down arrows to highlight a new PID (you might need to scroll a bit or go to the next page to find the EOP and EOT). Doing this should show the new PIDs with any other options you may have changed already.
