I have an 2011 Elentra GLS, will a class one hitch handle an older pop up camper...

Depends on the weight of the pop up camper. If the camper weighs less than the capacity of the hitch you have installed on your 2011 Hyundai Elantra as well as the towing capacities listed in your vehicle owners manual you would be fine.
The recommended ball mount is part # 3594, for a 2 inch ball part # 19258, for a 1-7/8 inch ball # 19256.
For trailer wiring you would want the part # 118473.
