The Blue Ox Hitch # BLU22FJ is a pretty straightforward bolt-on installation for your 2020 Sprinter 2500 with the standard bumper. It uses existing mounting holes in the frame, so there's no drilling or welding required. The hitch also comes with the necessary mounting hardware.
You'll need basic hand tools and a torque wrench, and I'd recommend having someone help hold the hitch in position while you're installing the bolts.
One thing to keep in mind is that trailer wiring is separate if you're planning to tow. But this does have a 7 way round plug mount, so you wont have to get one separately.
Are you installing the hitch mainly for a bike rack or do you plan to pull a trailer too?
