We are replacing our Suburban 10 gallon RV water heater with a Fogatti Insta shower 8. Since the Suburban access door and the cut out are larger than the Fogatti access door, is there an access door conversion kit for the Fogatti?

There is not a larger access door or conversion kit available for the Fogatti RV Tankless Water Heater # LSB64FR so I recommend switching to the Furrion RV Tankless Water Heater # FR68SR. This unit has an 18" x 18" door to help cover up the gap left from your old Suburban.
To be completely honest, I deal with quite a bit of troubleshooting with the Fogatti water heaters to where I personally wouldn't recommend them. A good point of reference is to check out the Q&A pages under each product to see what we're usually answering on it.
Since the mounting flanges on the water heater are going to be a different size you'll want to get some 1" x 2" or 2" x 2" pieces of lumber to frame in the water heater and give it something to mount into. I recommend using some butyl tape # AL28FJ on the back of the mounting flanges for both the heater and the door to help seal up the screw holes and some non-sag sealant # 344270341437-1 around the outer edge of the door.
