Would I be able to wire this to my 7way trailer hitch as a reverse light.

Yes, the 7-way trailer wiring has a reverse light circuit on the center pin so you could use it to power the SteelHead LED Work Light # TN66RR if you wanted. This draws a very small amount of amperage too so there wouldn't be any issues with that either.
