I intend to use a trailer brake controller and a trailer with brakes on 2 axles, would this still be the best wiring harness for me or would you suggest something else?

For 4-way wiring, the Tekonsha T-One Vehicle Wiring Harness # TK39VR is the best option for your 2021 Jeep Grand Cherokee L. In order to be able to use your brake controller, you will also need to add a 7-way connection once you have installed the 4-way.
For a 7-way, I recommend the Universal Installation Kit # ETBC7. This kit comes with everything you need to upgrade your 4-way to a 7-way. The included adapter has both a 4-way and 7-way connection so you will still be able to use both depending on your needs.
If you need a brake controller as well, I recommend the Redarc Tow-Pro Liberty Brake Controller # RED24FR along with the # RED69FR wiring harness. This proportional brake controller will work on trailers with up to 2 axles. The main unit installs out of sight and the control knob mounts wherever you want in the dash. I like this brake controller because it doesn't take up any space inside your vehicle and the control knob is simple and easy to use.
I have attached some review videos for your reference. We do not have an installation video for the # ETBC7 on the Grand Cherokee L, but I included one on another SUV so you can see what the process is like.

I have all this installed, but I’m struggling to find a cold brake switch wire to connect to the Red signal wire on the Redarc brake controller. I do not have the factory towing harness to plug into, any guidance on where to get the brake signal from?
