Will DT94YR fit a 2021 Outback XT with the dual exhaust?

It sure will, and here's why....
The Draw-Tite 76597 which we sell as part # DT94YR doesn't actually install under the vehicle where the exhaust could possibly interfere with the fit of the hitch. The hitch actually installs between the factory bumper/crash beam and the body of the vehicle which is above and rearward of the exhaust.
I've linked to an install video showing the hitch being installed on a 2021 Subaru Outback XT like yours. In the video, you can clearly see how the hitch fits to the vehicle, and how the dual exhaust doesn't affect the fit of the hitch in any way.
If you'll be towing with the hitch, you'll also need a trailer wiring harness like part # 118467, a ball mount like part # C45010 with pin and clip # PC3, and # 19260 for a 1-7/8 or # 63845 for a 2 inch trailer ball.
