Choosing between Curt #13251 and Draw-Tite 75338 Tow Hitch. I can probably get by with the specs on either. For a technically challenged nincompoop, is one easier or more forgiving to install? Thats the one for me. Thanks!

I recommend the Draw-Tite Hitch item # 75338. The Draw-Tite has a higher towing and tongue capacity than the Curt item # 13251. The Draw-Tite has a 7500 lbs GTW over 5000 lbs GTW for the Curt. The tongue weight being a difference of 750 lbs and 500 lbs respectfully.
The hitches have identical installation methods. They both require lowering the spare tire, removing a couple of pins holding on a piece of trim, installing 4 bolts through the rear bumper support, then reinstalling the trim pins and raising the spare tire back into position. There is zero drilling or cutting required. The only difference I can see that may add difficulty is the Draw-Tite hitch weighs around 5 lbs more than the Curt. I have linked videos to both.
