Question:
I’m thinking about converting a 4 way to a 7 way and using a curt echo. Is it possible to get the 12v feed I need from the rear 12v plug in the cargo area instead of stringing a wire to the engine compartment?

That is a good question, but you do need to run the 12 volt hot lead to your battery when installing the wiring on your 2020 Subaru Outback for the Curt Echo Wireless Trailer Brake Controller # C51180.
The reason is this is the only way to ensure your car's wiring is not otherwise affected as routing the power there can cause potential shorts, damaging your Subaru's electrical system. So you will definitely want to route the power wire to the 12 volt battery in the engine compartment. In order to install the Echo you will need the following parts for your '20 Outback:
- T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118467
- 7-Way RV Upgrade Kit for Trailer Brake Controller Installation # ETBC7L
Additionally, if you also need a hitch for your 2020 Outback I recommend the Draw-Tite Trailer Hitch Receiver # DT94YR.
I have added links below to video reviews and installs for you to check out as well.
