Can I install a trailer wiring harness on my 2020 Cadillac XT5 without cutting wires like is there some kind of plug?

The 2020 Cadillac XT5 has a tow package port which is located behind the rear bumper fascia. Therefore, you can use a plug-in-play wiring harness which does not require any wire splicing or cutting. I recommend the T-One Vehicle Wiring Harness part # 118720 if you need a 4-way or part # 118276 if you need a 7-way. The 7-way would be needed if the trailer has brakes and in which case you would also need a brake controller. I recommend the Curt Echo Mobile Trailer Brake Controller part # C51180 because it is very easy to use as it plugs into the 7-way and also easy to learn as it is operated via your mobile device. I have attached a photo to show where the factory tow package port is located.

If you don't already have a trailer hitch or one picked out, I recommend the etrailer Trailer Hitch Receiver part # e62AR which is a bolt-on fit. Therefore, you could mount the T-One Vehicle Wiring Harness to this with part # 18144 for the 4-way or part # PK12711U for the 7-way.
