I have a solution for you, and I was able to check the owner's manual for the 2017 Chevy Volt and it does clearly say that you're not supposed to use tire chains because of clearance issues; so you're absolutely correct and this does put you in kind of a bind. Fortunately I have a great solution for you- the ISSE Hybrid Snow Socks # TCH66. Snow socks are a great alternative for vehicles that do not have adequate clearance in the wheel well to safely install tire chains and they provide solid traction in even the deepest of snow. These will work well for your trip to Yosimite and I've seen a lot of cars up in the mountains that use these with a lot of success.
You'll want to make sure that you're only using these on snow covered roads and observe a 30mph speed limit while these are on your car.
