Question:
So how do I know if my z51 has a dual exhaust?

The only versions of the 2008 Chevy Corvette the Curt hitch part # C11380 won't fit are the models that have the dual exhaust mode where when you accelerate hard the mufflers get bypassed. I looked up the Z51 specs and that is not a standard feature of it so this SHOULD fit well unless you also have the dual exhaust mode setup.
Exhaust rattle on trailer hitches is normally fixed by bending the exhaust hangers so that the pipes are held further away from the hitch. Or you can go with a longer or shorter hanger setup.
