Question:
When taking out the jounces do I reuse any of the assy. Does the metal piece bolted to the body get reused?

When installing the # F4170 Firestone Air Bags, the jounce bumpers inside the coil springs on your 2008 Hyundai Santa Fe will need to be removed, but you will not remove the metal jounce bumper mount. I attached a drawing showing this and installation instructions for you to review prior to purchase.
To remove the jounce bumpers you could use pliers to grab and pull them down at an angle or you could use a flat pry bar to get behind the jounce bumper and pry down at an angle.
We did have a customer who said that removing the jounce bumper mount, for drilling, makes the task much easier. You would need to replace it after drilling it.
