What are the parameters I can affect with this tuner? What does it tune to make power gains? CNN An I adjust tire size for speed calibration?

I contacted the manufacturer, Edge, about the EvoHT2 Hand-Held Performance Tuner # EP26040 that works with a 2002 Cadillac Escalade and if your car has the 6.0L V8, along with the pre-loaded performance and economy tunes, here are the parameters that it can affect: Data Logging, Calibrate Speedometer for Gear Ratio, Calibrate Speed for Tire Size, Cooling Fan Control, Top Speed Limiter, Rev Limiter, Shift Points, Shift Firmness.
In regards to what it tunes to make power gains, I was told that the tuner modifies stock fuel mapping and also uses advanced timing and fuel consumption to optimize engine performance.
