There is a trailer hitch that will fit a 2004 Jeep Grand Cherokee Laredo but the one you mentioned does not fit. Instead I strongly recommend the Draw-Tite # 75139 because of Draw-Tite's strong reputation for making high-quality trailer hitches and because it is a bolt-on installation that will not require drilling into your Jeep's frame to install.
This is a Class III hitch with a 2" receiver with a 500 lb tongue weight capacity and 5,000 lb towing capacity. It has a black powder coat finish to help prevent rust from building up and comes with a lifetime warranty. I have added a photo which shows this hitch on an '04 Grand Cherokee as well as a link to a video of the hitch being installed on a 2004 Grand Cherokee.
For wiring which will give your Jeep a 4-way connector and allow you to power your trailer's lights you need Wiring Harness # 118381 if you have the factory tow package or # C55369 if you do not have that. I have added a review video of the latter and have attached the installation instructions for you to check out.
I also recommend checking out Ball Mount Kit # 989900, which is for 2” hitches and may fulfill your towing needs in one tidy package; two ball mounts - one with a 3/4” rise or 2” drop and the other with a 2-3/4” rise or 4” drop - a 1-7/8” hitch ball, a 2” hitch ball, and a pin and clip.
