You should not have any issues installing a brake controller on either of your vehicles. We have a video installation, see links, that should be very helpful. The vehicle in the video is a 2008 Grand Caravan, but the wiring principles will be the same for both of your vehicles. At this time we have not heard of any issues with brake controller installation on a 2000 Chevy Astro van or a 2003 Dodge Grand Caravan.
We have all the parts needed, and detailed installation instructions for both of your vehicles. You will need to start with a working 4-Way connector, if you do not have one. For the 2000 Chevy Astro van use the 4-Pole Hardwire Kit, part # 18252, and for the 2003 Dodge Grand Caravan use the T-One Wiring Harness, part # 118376. I have provided a link to video installations of these harnesses also.
To complete the brake controller installation you will need a brake controller. I recommend the Prodigy P2, # 90885, because it is easy to use and setup. You will also need the brake controller installation kit, # ETBC7, to wire the brake controller in the cab and 7-Way RV connector at the rear of your vehicles.
