The Stromberg Carlson Extend-A-Shower Shower Curtain Rod for RVs - 35" to 42" - Satin # EXT-3542S is the smallest curtain rod we carry to allow the elbow room you are seeking. This should still work for you, but you will need to use a shower curtain weighted at the bottom to allow the angle to keep the curtain within your shower pan.

Your mounting locations will need to account for the smaller size shower pan. I've attached a photo showing the dimensions to assist so you can determine best fit. The ability to collapse the unit may not be possible with your application depending on the mounting location.

Cutting that center bar is possible and would work. You will just need to make sure you also can drill the holes for connecting the hinge. Also cutting the bar may cause the finish to be removed from that portion of the bar, so you will want to use paint or clear coat to seal it so it doesn't corrode in the moisture.
