For your 2016 Chevy 2500 with 6.5 foot bed, I recommend starting with the Reese Under-Bed Rail and Installation Kit for Reese Elite Series 5th Wheel Trailer Hitches # RP30868 you mentioned. This under bed system is compatible with other sliding hitches so the B&W Companion # BWRVK3370 is not your only option. Reese made the Elite Series to work with the original Ford trucks, so the Factory Ford puck system is identical.
My personal preference is the Demco Hijacker Autoslide 5th Wheel Hitch w/ Slider - Single Jaw - Ford Super Duty Prep Package - 18K # DM8550024 which will automatically slide as needed so you don't need to get in and out of your truck to manually adjust a slider hitch to make tighter turns like around gas pumps or at your campsite.
If you prefer the manual slider, then I recommend the Curt A16 5th Wheel Trailer Hitch w/ Slider for Ford Towing Prep Package - Dual Jaw - 16,000 lbs # C16520-16020. This round tube slider won't bind and the hitch head allows you to easily install in pieces. It also has an 3 point indicator so you can see when you are connected or disconnected for your trailer with a quick glance.
With any of these options, I also recommend the Bargman Wiring Harness # 50-97-410 to give you an easy connection access point in your truck bed and also a clean look.
