Will this work with Thule T2 Classic platform rack with 3 bikes? We are towing a Rpod 179 with a Jeep Grand Cherokee?

I may have a solution for you, however you will not be able to use the Swagman Straddler # S80503 referenced in your question with your Thule T2 Pro X Class Bike Rack # TH83GC. The primary reason for this is that the Thule T2 Bike Rack is simply not rated for use on a trailer. Because a bike rack mounted on a trailer will be subjected to greater bounce and movement compared to that of a standard passenger vehicle, only certain bike racks are tested and approved for this use. As you also referenced, the Straddler does have a 2-bike limit, so you would not be able to load 3-bikes onto the rack.
In order to use your existing Thule T2 Pro X # TH83GC rack for 3 bikes would be to get the extension # TH55GC and then you could use it while towing your R-Pod, your best option will be to use the Curt Multipurpose Ball Mount # D210. This ball mount is compatible with 2 inch hitch receivers and provides you with both a ball mount for towing a trailer along with a 2 inch receiver above it for mounting accessories like your bike rack. It has a 750 pound tongue weight and a 7,500 pound towing weight capacity. You will just want to make sure that there is enough space between your hitch and R-Pod for the bike rack to sit. The end of the T2 rack will be 36 inches from the center of the hitch pin hole on your vehicle.
