Can the sink covers be cut to fit. My sinks are approximately 12 x 12.

Actually you would not necessarily have to cut the RV sink cover # CAM43431. The feet on the bottom are adjustable so you can adjust them as needed to fit your 12 x 12 sinks and it is possible to have 2 next to each other as well due to the adjustability.
If you wanted to cut them you could. A band saw would be a good option for an even cut. Then you could sand the edges and be good to go. Out of all the sink covers we have this one is the closest to the dimensions you are looking for. I have linked a video featuring this cover for you.
