I have the Draw-tite 3 ton hitch 75673 and wiring harness 17499-181 on my 2014 Outback 2.5i Limited. Will all of this fit on my 2018 Outback 2.5i Limited??

The Draw-Tite 2-inch Class III hitch # 75673 fits the Subaru Outback Wagon for model years 2010 through 2018 so you can install it on the new car as long as you order a replacement hardware kit # RHK. An installation video is linked for you.
Hitch installation hardware cannot be re-used since it is designed to be torqued down only once. You can order a complete new hardware kit using the part number RHK and your hitch part number 75673. This will enable you to safely install the hitch on the new car.
For wiring you can refer to the linked page showing 4-pole kits like # 118467. I could not find information on a wiring harness part 17499-181.
