As long as your 2010 GMC Sierra 2500HD has a towing capacity great enough to tow your Montana 5th wheel trailer then you should not have any problems towing through the mountains. I would recommend a transmission cooler given the weight of the trailer and the terrain you will be pulling it through. Beyond that, make sure you follow the owners manual recommendations for towing and you should not have a problem.
If you like the Curt hitches, you can use installation kit # C16418-104, and hitch # 16516, for a 6-1/2 foot bed. For an 8 foot bed you can use the same installation kit and the hitch you referenced, # C16115. I have included a link to the installation instructions for the install kit for reference.
I have included a link to the transmission coolers recommended for your truck. Just select your trucks engine size to see the available coolers. I would go with the largest capacity cooler available for your engine. I have included an FAQ article on transmission cooler and a video showing a typical installation.
