It took a little research but I was able to find the towing capacity information for the 2001 Subaru Outback in the online owner's manual. For manual transmission models and a trailer with no brakes the towing capacity is 1,000 pounds; with brakes it is 2,000 pounds.
It is the same for automatic transmissions (1k without brakes or 2k with brakes) but also Subaru says:
When towing a trailer on a long uphill grade continuously for over 5 miles (8 km) with an outside temperature of 104°F (40°C) or above the capacity is 1,000 pounds.
That seems oddly specific but there it is. Consult your owner's manual to confirm this and other fun facts about your Outback.
For a trailer hitch you can use # 36284. I have included a link to a video showing an example installation for you. The recommended ball mount is # 36061. With it you can use 1-7/8 inch ball # 19257 and for a 2 inch ball use # 19258. And for trailer wiring you can use # 118461.
Regarding the wiring if you need to tow a trailer that does over 1,000 pounds (and that trailer has electric brakes) we will need to set you up with a brake controller and 7-Way trailer connector. So in this scenario in addition to the wiring harness listed above you will also need # ETBC7 and a brake controller such as # 90885. I have linked some helpful information on this installation should you need it.
Since you are concerned about your transmission I recommend adding a supplemental transmission cooler, # D13502. This cooler will aid the factory cooler which will help out your transmission tremendously especially when towing.
