Good news! I can help you outfit your 2007 Honda Ridgeline with all the parts you mentioned to be ready to tow.
The hitch I recommend is the Draw-Tite # 75280, because of its high towing capacity. It's important to note that you will be limited by your lowest rated part which may end up being your vehicle so you will want to be sure to check your owners manual for any limitations.
The 4-pole harness I recommend for your vehicle is the # 118400, which will plug into your vehicle's existing wiring. To transform that 4-way to a 7-way I recommend the # ETBC7, this kit will allow you to simply plug in that 4-way and include all the items you need to finish setting it up for a brake controller. It's always a good idea to put dielectric grease like # 11755 between connections that are exposed to the elements.
As for brake controllers I highly recommend the Tekonsha P3 # 90195, because it is a proportional brake controller which means it senses how the tow vehicle is slowing or stopping and applies the trailer's brakes with the same intensity. It also has a full display screen instead of codes that need deciphering. The P2 # 90885 is like the P3's little brother, it has all the great qualities but won't have the display screen.
To tow you will also need a ball mount and a ball, these will be dependent on the trailer you have. For a good overall package, we have the # 989900 ball mount kit for 2 inch trailer hitches, like the one I recommended for your Ridgeline. This kit has the two most common ball sizes and two of the most requested ball mounts as well as a pin and clip and a neat carrying case. I have linked a Help Article to help you determine which setup will work for your needs.
I have also linked a few installation videos of the products on similar vehicles and the custom hitch install on your 2007 Honda Ridgeline to this page for your convenience.
