My towing capacity is said to be 10,500 pounds. Does that increase if I tow with a fifth wheel as opposed to a regular tag along hitch?

The overall towing capacity of a vehicle will be the same regardless of the hitch style that is used. Typically the bumper hitch will have lower capacities than the overall capacity for the truck though.
If the overall towing capacity of your truck is 10,500 lbs then that is the max weight fifth wheel trailer you could tow.
