I have a trailer rated at 10k, what size jack in lbs should I use

A trailer that weighs 10,000 lbs would have a tongue weight of anywhere from 1,000 lbs to 1,500 lbs. The Bulldog Jack part # BD155032 that you referenced has a 5k capacity and would be more than enough.
For a footplate to go with this jack you would want part # JF-99 or # JF-101BK for a wheel caster part # BD500245.
