Question:
Can this be hooked into a car monitor RCA Plug or do I have to use the included monitor?

You will have to use the included monitor with Hopkins backup camera system # HM60195VA. It does not have a way to plug into any other monitor. The same would go for any of the similar backup camera systems. I do have one similar to this, also made by Hopkins, and it has been working beautifully for me for a couple of years now.
A different style, # KSVS-8, does have RCA style jacks and could potentially work for you but it just hasn't been tested with any other monitors.
