I have a jonny boat kayak with a 2.5 hp. motor. Its 11-6 long and 3-0 wide. Its around 125-150 lbs. I think this is what I need. Im thinking center it weight wise and spread the bars to width and ratchet strap the boat. Is my thinking correct ? Im not getting a trailer.

It sounds like you're wanting to use the Let's Go Aero TwinTube U-Build-It Slide-Out Hitch Rack, part # HMK901 as a hitch load extender, rather than using it as a platform to mount a tray or box to carry extra cargo.
Assuming you have a truck, I would actually recommend using a product designed for that application, like the Erickson Big Bed Junior Load Extender for Truck Bed or Roof - 2" Hitches - 350 lbs, part # EM07605. I've attached a photo of it being used to haul a motorized jon boat, very similar to what you want to do.
The Bed Junior extends 4 feet from your truck's hitch and features two welded tie down loops so you can easily attach your ratchet straps to it. If you don't already have them, I recommend the Erickson Re-Tractable Ratchet Straps # 34413, and to secure the extender to your hitch, I suggest using an anti rattle lock, like # 63232.
