I looked at some pictures of the 2016 GMC Sierra 1500 with the factory roll bar and it looks like it mounts just to the tops of the bed sides. If that is true then you can install a Tonneau cover as long as it is a model that fits between the bed sides.
With the TruXedo cover # TX771801 it overlaps just a little bed on the tops of the bed sides so I do not recommend it because of the interference and it would wear out the fabric of the Tonneau cover.
It looks like the least expensive cover that will work is # BAK126120. I have linked a video review of this cover for you. But even this cover could make contact with that roll bar. If I could see pictures of what it looks like from inside the bed look at the roll bar at the bed sides that would be a tremendous help in figuring this out.
