I recommend the Fathom RV Tank Monitoring System # FM398FR. This kit includes 3 radar sensors, one for each of your fresh, gray, and black water tanks, along with a Bluetooth hub that lets you monitor their levels right from your iPhone using the Fathom app.

What's really nice about these sensors is that they attach to the outside top of your plastic tanks using adhesive and measure the water levels through the tank walls. That means no drilling into your tanks or dealing with traditional probes that can get covered in buildup and give inaccurate readings.

Fathom also offers kits for different numbers of tanks if you need more or fewer sensors:
