I have a 2025 Equinox. It has the side rails running along the roof. I would like to add a set of crossbars to mount my bike rack. Is there a set that will work for my vehicle and give me enough capacity?

Yes, there is Martin and congrats on the new SUV! To add a roof rack to your 2025 Chevrolet Equinox's roof rails, I recommend the Yakima Custom Fit Roof Rack Kit item # Y53MD. This mounts directly to the side rails and has more than enough capacity for a bike rack.
