The Fifth Wheel to Gooseneck Adapter, part # CAB-C5G, would be safe for pulling your 12,000 pound Fifth Wheel. The adapter is rated up to 20,000 pounds gross trailer weight and you are well under the limit. Just make sure your king pin box on your trailer is no longer than 30 inches from the center of the king pin to the center of the the mounting bolts.
Adapters are not the best thing to use for continual use. A Fifth Wheel trailer is designed to use the movement of the Fifth Wheel hitch. Adapting a fifth wheel to a gooseneck eliminates the movement of a fifth wheel head producing a noticeably rougher ride. I would recommend just using the adapter occasionally when there is not a fifth wheel truck available or converting the trailer to a gooseneck without the use of this kind of adapter, or installing a fifth wheel system into the truck.
