I ordered the Hopkins wiring kit HM56304 for a 2014 Honda CRV, I have a power cord that is a 7 to 6 pole, could the end of the 4 wires that come from tis wiring kit be cut off and connected to the 6 pole side?

Yes, if you wanted to cut off the 4-way connector of the Hopkins tail light wiring kit part # HM56304 and wire it to a 6-way like the part # C92FV you certainly could.
