Will this work on the Detale 20161 kit?

We do have what you need, but the Replacement Thermostat for Derale Fan Controls # D16728 is the not the correct replacement thermostat for the Derale Performance Electric Fan Kit # D20161. The # D16728 is too small, it is only 6/32".
The Derale Performance Electric Fan Kit # D20161 uses a 3/8” Aluminum Adapter NPT thermostat switch assembly like the Derale Thread-In Thermostat Fan Control with Dual Threads # D16730.
