Does the stock impact bar on my 2016 BMW X5 get discarded or reinstalled with the etrailer trailer hitch?

There isn't an etrailer hitch for your 2016 BMW X5, though I believe you are referring to the Draw-Tite Max-Frame Trailer Hitch Receiver # 75600.

The impact bar gets reinstalled with the hitch, as you can see at about the 6:25 mark of the linked video of the Draw-Tite Max-Frame Trailer Hitch Receiver # 75600 being installed on a '16 BMW X5.
