The Thule easyfold xt2 specifies a minimum distance of 1.5 inches between the end of the hitch receiver and the hole. Do these trailer hitches meet that requirement.

Both the Draw-Tite Trailer Hitch Receiver # 24967 and # 24847 you were looking at for your 2012 Toyota Prius v measure over 1-1/2" from the center of the hitch pin hole to the front edge of the receiver so you will have no issues using the Thule EasyFold XT Bike Rack for 2 Electric Bikes - 1-1/4" and 2" Hitches - Frame Mount # TH903202 you mentioned.
Between these two racks I recommend the # 24967 as it has a crosstube that sits further underneath the vehicle and will be less visible while still having the same 200lb tongue weight and 2000lb trailer weight rating.
