Question:
Will the 75751 mount properly with a full size tire installed under the vehicle? Will the full size spare be accessible with the hitch installed?

As the 2012 Ford Escape does not appear to have originally come with a full size spare tire, I cannot say with 100% certainty. However, I can supply some rough measurements of the wheels that would usually come with this vehicle as a comparison, which may help answer your question.
The spare that would typically be included would have a 145/90R17 tire size. This size tire has a rough diameter of 27.5 inches and a width of 5.7 inches.
The stock tire size a 2012 Escape came with looks to be 235/70R16. This will have a diameter of 28.95 inches and a width of 9.25 inches. If your spare matches this size or is close to it, you most likely will not be able to store it under the vehicle, unfortunately.
