I need to check the torque requirements for a Toyota highlander 2inch ball hitch that I installed 6 YEARS AGO - WHAT is the torque for this hitch

Though it will depend on the hitch you have installed, all of the M10 bolts for the Draw-Tite # 75726 and 75586 should be torqued to 42 lb-ft. The Curt # 13534, which also uses M10 bolts, should be torqued to 48 lb-ft. If you installed an EcoHitch, like # 306-X7137, the M10 bolts should be torqued to 60 lb-ft.
This should be checked every now and then to make sure everything is secure. I generally recommend doing so at the beginning and end of the towing season.
