The correct Draw-Tite hitch for your 2007 Honda Pilot is the # 75599, which will give you a 2" receiver to allow for towing a small trailer or carry a variety of hitch mounted accessories. If you're going to be towing then you'll also need a wiring harness, ball mount, hitch ball, hitch pin and clip.
For wiring I recommend using the Tekonsha # 118336 because of the reliability of Tekonsha wiring harnesses. This will simply plug into the tow package wiring plug on the rear of your vehicle, so it's a simple installation process. You can complete your towing setup with a ball mount kit like the # EBMK4, which comes with a ball mount, 1-7/8" and 2" hitch ball, hitch pin, clip and storage bag.
I've linked a helpful article we did on how to measure to determine what rise/drop you'll need. I've also linked some review and installation videos of the parts mentioned in case you're planning on installing these yourself.
