Hi, I wanted to know if I buy these assemblies, how much air should I run in them? I see 80 is the max would around 50-60 be sufficient? Also, I see the wheel has a lower load capacity than the tire so would it be limited to the wheel capacity? Or the tire capacity? By no means will they ever be loaded close to the capacity.

The limiting factor for the wheel #20422 that you would mount the # 724862519 Goodyear Endurance ST255/85-16 tire on is the valve stem. Inflating the tire to 70 psi will give the tire a 3860 lb per tire/7720 lb per axle load rating, which will bring it in right under the wheel's capacity and would work well for you.
Typically, tires are load rated at the full inflation as stated on the tire sidewall, but unlike the other tire manufacturers Goodyear tests the load ratings of this fire from 25 psi all the way up to full inflation at 80 psi as shown in the provided chart.
