There's a big Curt and Stealth weight difference but does that affect it's strength/capacity?

The weight of the hitch is not a factor in the strength of the hitch. While the Curt Trailer Hitch Receiver # C67JR ships at 28lbs and has a tongue weight capacity up to 600lbs, the Stealth Hitches Rack Receiver # 391SUOB20 ships at 41lbs and has the same 600lb tongue weight capacity.
It's important to note that these hitches will always be limited by the vehicle's own capacity so it's important to refer to the owners manual before taking on any towing activity.
To round out your towing setup I recommend the Curt Towing Starter Kit for 2" Hitches item # C45534. This towing kit will provide you with a 2" ball and a fixed ball mount with a 3/4" rise and 2" drop. It also includes a hitch pin and clip, hitch receiver lock with keys, hitch cover, and a storage case.
