Our Cedar Creek has a cathedral ceiling and us slanted. This fixture looks adjustable with a screw. Can we move it to level?

I do have a potential option for you, however the Gustafson RV LED Ceiling Light # 277-000469-499 that you referenced doesn't have an adjustable base that allows the light to sit level when mounted to a slanted ceiling like what's on your Cedar Creek Trailer. There isn't a way to move this shade around.
Your best option will be with a reading light like the Gustafson # 277-000334, which features an adjustable head that can be pointed into a certain position to stay level when mounted to your ceiling.
