Question:
I have been all over the web forums. This hitch seems to work well, but I see 10 out of 10 installation difficulty. Do you have a set of detailed instruction or video to watch and which wiring harness is best?

I have looked over the instructions, and despite the 10 out of 10 installation difficulty rating, I believe that if you have average mechanical ability, you should be able to complete the install without any problems.
On a 1998 model, it appears that there are only 4 bolts holding the bumper fascia in place. Once those are removed, you can pull off the bumper fascia. The hitch itself is held in place by 4 bolts that will thread into nuts that have been welded behind the bumper structure. Due to the age of the vehicle, you will want to spend some time ensuring that these nuts are free of dirt and corrosion. Spray some WD-40 or other spray lubricant in the holes, and use a wire brush to clean the threads. Our installers have found that the brush from a battery terminal cleaner like part # DW00254 works very well for this purpose.
Then, the bumper reinforcement brackets are installed using a total of 8 bolts, 4 per each bracket. The brackets are fastened to the frame members using bolts, two per side, toothed washers and handle nuts that are fed through an existing opening in the frame and manipulated so that they catch the bolts fed through the brackets. The brackets are attached to the bumper structure by nuts and bolts. I would strongly recommend getting a bolt leader or two (part # TR55393) to assist fishing the bolts through the bumper structure.
Fishing the bolts through the bumper and manipulating the handle nuts to catch frame member bolts will be the most challenging portion of the install, but with a little patience, it can certainly be done.
The Curt # 13018 does not use the bumper reinforcement brackets, so the install would be easier, but that hitch will not work if your vehicle has the air-ride suspension. Another drawback is that if you are planning on using the hitch as a mounting point for a cargo carrier or bike rack, the hitch warranty stipulates that a reinforcing strap like # 18050 be used.
Part # C59236 is a recommended trailer wiring harness for your ML320.
I have linked you to two videos that you might find helpful, a video showing how handle nuts are used, as well as a video that demonstrates how to use the fish wire. I have also linked to the install instructions for both hitches.
I've also linked you to a video showing the hitch being installed on a 2003 Mercedes M-Class.
