Does the furrion cameras use CCD protocol? Do they work well will Airstreams?

By CCD protocol you are referring to the camera sensors the Furrion kits like part # FOS43TASF are instead CMOS which is much less expensive. If you are concerned about image quality though check out the review video link I attached that shows how well the image quality is.

These kits have the best reception though so they will work great in your Airstream application.
