If i'm going through this much should i just go ahead a wire up a 7 and 4 pole plug setup on the van? If so what does that change on my wiring connections from my cut wires to the replacement plug?

You could wire in harness # PK11998 to those factory wires on your 2004 Chevy Express. If you are only needing a 4-Way connector such as # 41155 then you would not use the blue, black, or yellow wires from PK11998 and can tape them up and tuck them out of the way.
The wires on your van will need to be tested with a circuit tester such as # ALL640595 or a meter if you have one. You cannot go by wire color since there isn't exactly a standard that everyone goes by.
On the PK11998 harness the red wire is left turn signal and brake lights, white is ground, green is right turn and brake lights, and brown is for the running lights.
