I spoke to both of the trailer hitch manufacturers (Draw-Tite/Curt) that have listed a fit for your 2018 Audi Q5 and both of them stated that their trailer part # C13331 for Curt or part # 76183 for Draw-Tite will not interfere with the parking camera or collision sensors on the vehicle.
I recommend using the hitch cover part # 22282 while the hitch is not being used which will protect the inside of the receiver tube from rust. I have attached an install video of the Curt hitch for you as well.
