Hi I was wondering if a set of nerf bars off of a 06 Chevy 1500 crew cab fit a 2000 dodge Dakota crew cab

No they would not as they are very different trucks. You'd have to go with a set specifically designed for the 2000 Dodge Dakota Crew (Quad) Cab like the # DZ3700301.
