I have a 2012 BMW X5 and I am looking at both the Draw Tite and/or Curt class III hitches meant for this vehicle. Is my understanding correct that with the Draw Tite hitch, the bumper beam gets reinstalled over the hitch and with the Curt, it does not get reinstalled?

Yes, you are correct. Curt's # 13077 instructions state to discard the steel bumper beam and fasteners while the Draw-Tite # 75600 has you reinstall them.
For this reason, I would highly recommend the Draw-Tite hitch over the Curt hitch for your 2012 BMW X5.
